Welcome back, dear friends, to our quest to find the best Vegetarian and Vegan Mediterranean Menus, great alternatives to a diet based mainly on meat.

Last time, we explained how, due to their beliefs or lifestyle, many people choose to exclude meat (and sometimes dairy products as well) from their diet. We listed many Mediterranean vegetal products that can replace meat.

Today, we are going to talk about specific Vegetarian and Vegan Mediterranean dishes you can try out during your stay in fairytale sunny places like Italy, Greece, Spain, Portugal or Malta.

Spinach, Peppers, and Cherry Tomato Salad is a purely meat-free dish. As is another irresistible salad: Spinach with chilli and lemon crumbs. The spinach is very healthy, having a lot of iron, and complemented by crumbs of lemon to give it a slightly tart flavor and chilli for a bit of spiciness, you will have before you a sheer culinary delight. When we are talking about salads, be inventive! These are just two suggestions, but like we said before, the list of fruit and vegetables is virtually endless, so don’t be afraid to color outside the lines.

Finally, we get to pasta: an Asian product that nonetheless achieved its popularity in Italy. Pasta can be prepared in hundreds of ways, many options being vegetarian. For example, Tagliatelle with vegetable ragu (the sauce is similar to the famous Bolognese) or Pasta with spinach and tomatoes.

Would you have imagined Lasagna without meat? Easy: replace the meat with spinach, bake the pasta layers with a creamy white sauce (made of soy) and a nutmeg dusting. This should do the trick!

Stuffed peppers are a popular, fairly easy dish: all you need to do is fill big peppers with… well, meat you would say. No, today we explore the alternative: rice and fresh vegetables are just as tasty, and if you add some condiments, the flavor will be even better! Then all you need to do is put them in an oven until they are nicely baked.

There are so many other options – so all you have to do is be creative!
